What did you have for dinner last night?
Lamb Chops with Greek Salad and French Bread
Ingredients:
4 to 6 medium sized lamb chops
Extra Virgin Olive Oil
Lemon Juice
Greek Seasoning
Salad (Romaine lettuce, Roma Tomatoes, Shredded Carrots, Red Onion, Bell Pepper, Kalamata Olives)
Feta Cheese
Directions:
Marinade Lamb Chops in oil, lemon juice, and Greek seasoning for a couple hours in fridge.
Remove Lamb chops 30mins before cooking.
Cook on grill 5mins each side or until done (do not overcook).
Mix olive oil, red-wine vinegar, a splash of lemon juice, and Greek seasoning for dressing.
Sprinkle feta cheese over salad.
Serve with buttered French bread straight out of the oven.

Half a lemon meringue pie.
(Wasn't exactly a dinner......., was pigging out every hour from 6pm -9pm....., wife was at the cinema with a couple of pals)

No mate, it was just 5 enormous lumps of very fresh local lamb, BBQ'd at very short notice following an urge to dine Al fresco.
Not very exciting I know, but it beat cooking in the kitchen on a very hot summer Sunday afternoon.

I usually use premixed rice, but I jazz it up a bit. I have made it completely from scratch...I reserve that approach for special occasions. The key for me is grilling your meats before adding to the rice. Most people just boil it all together. The KGB agent just talks a load of "tripe" if I'm honest.
I'll eat any jambalaya that hasn't got sea life in it. Went to a BBQ recently to a friend of my bro in laws and there was jambalaya there. But it had shrimps and stuff in it. Not my thing.

Grilled Italian sausage with peppers...cooked in a BBQ Wok served on fresh baked rolls with a slice of melted provolone on top... Delicious!...and a few Boulevard Unfiltered Wheats.

Dinner at the Golf Club tonight. Steak & Ale pie, chips and loads of veg followed by Lemon Meringue pie and ice cream. Very nice too especially for £11.

I began smoking a brisket at 0800 central standard time. I hope I will be able to report that I had delicious, smoked brisket for dinner...to be cont.

I'm happy to report the brisket was lovely! It weighed around 9 and a half pounds. I used charcoal and hickory wood chunks in a Webber Grill. I had to overcome a few problems: the brisket was 16 and a half inches long and the grill is 16 and a half inches long, so I had to do a little trimming. My grill is not really designed for a brisket that size, but I thought 'what the hell' you never know 'til you've tried. According to instructions, you're supposed smoke for an hour per pound. At around 7 hours my fire ran out of fuel, but instead of trying to relight the fire I just wrapped the brisket in foil and popped it in the oven at 200 degrees. After a couple hours, the brisket was perfectly tender and retained it's smoked flavor.
I served the brisket in lightly fried corn tortillias, topped with freshly made pico de gallo and a side of homemade pinto beans.
